ReplyDeletePaleo (+vegetarian) Stuffed Mushrooms:
20 stuffing mushrooms (I used baby portabellos)
1 tablespoon grapeseed oil
1 red pepper
1 green pepper
1 small yellow onion
1/2 red onion
1/4 cup dried cranberries
1/4 cup pecans
1 teaspoon minced garlic
1 teaspoon black pepper
Remove the stems from the mushrooms and chop. Roughly chop peppers and onions. Add oil to a skillet over medium heat and add the mushroom stems, peppers, onions, garlic, and black pepper. Saute 20 minutes (or until onions brown) Transfer veggies to a food processor and add pecans and cranberries. Coarsely chop. Stuff mushrooms and bake on parchment lined cookie sheet for 20 min.
Just a heads up: Use more (or larger) mushrooms or halve the rest of ingredients. As written I had about 2 cups of "stuffing" left over.
